Sausage Breakfast Casserole

(6 servings)

• 1 and 1/2 lbs bulk George Jones Mild or Sage Sausage -- crumbled and drained

• 2 cups grated extra sharp Cheddar cheese

• 8 slices whole wheat bread

• 6 lg eggs

• 3 cups heavy cream

• 1 tbsp margarine or butter

• salt and pepper to taste

Spray a 9x13x2 baking pan with non-stick spray and heat oven to 350 degrees. Lightly butter the bread on one side and place in the baking pan. Spread the crumbled sausage on top of the bread, then add the grated cheese. Beat the eggs and cream together in a bowl, add salt and pepper to taste and pour over the layers in the pan. Bake at 350 degrees until bubbly and golden brown (about 30 minutes). Let the casserole sit for 10 minutes before serving.
